That is how white coat for doctors came in to existance. Anyway, there is no proper history, how doctors started wearing white coats. But two pictures will show you the shift from black dress to white dress.
There are two paintings by Thomas Eakins. One painting called as "The Gross Clinic" , in this doctor wearing black coat in the operation theatre has been portrayed. This painting was painted in 1875. Another painting called as "The Agnew Clinic", painted in 1889 shows a doctor wearing white coat in the operation theatre.
Why Lawyers wear black coat?
Lawyers have different dress code in different countries. In India lawyers wear black coat.

Black represents authority and power. It shows submission by oneself. Priests wear black dress while they submit themselves to the God.
Now let's see the history behind the black dress. In February 1685 when King Charles II of England died, people wear black dress to show their moaning for the King. Then the uniform of lawyers were designated as black gown.
Black dress has been used in many countries where there was British rule before.
